OKINAWA SPINACH – Gynura crepioides
Sub-tropcail , dense perennial vegetable that grows as groundcover. Has shiny leaves that are green on top and purple on the bottom.
Great in salads , or can be cooked ( but heat turns the leaves green) – really does not taste like spinach- has crisp , nutty taste.
Also purported to help lower cholesterol.
When grown in Hawaii, it attracts the Kamehameha butterfly
Best propagated from cuttings . If planted from seed it reverts to original all green plant , losing nice purple
